Chicken in Saffron Sauces

     
         
 
  Ingredients  
     
  Baby Brand Saffron FLAVOURING
• 1 lb Ripe tomatoes peeled and seeded • 1 pkt Baby Brand Saffron • 1 sprg or leaves of sage, thyme, tarragon and bay leaf • 2 x Cloves garlic, crushed • 3 tbl Olive oil • 5 fl oz white wine • 5 fl oz chicken stock • Half a pint of cream

THE MEAT
• 1 x Chicken breast • 1 x Leg of chicken

GARNISH
• 4 oz Cooked rice • 6 x Black olives • Chopped herb
 
     
  Preparation  
     
 
  • Pilaf:
    • Heat oil in a saucepan over medium heat.
    • Add coriander seeds and fry until toasted.
    • Stir in bell pepper, cayenne, and cinnamon; saute until barely tender, about 4 minutes.
    • Pour in water or stock and bring to a boil.
    • Stir in couscous, cover and remove from heat.
    • Let sit 10 to 15 minutes.
    • Couscous is ready when grains swell and liquid is absorbed.
    • If liquid remains, return to low heat briefly and cook until absorbed. Season with S&P and mint (or thyme).
  • Baby Brand Saffron Cream:
    • Combine neufchatel or cream cheese, yogurt, and Baby Brand Saffron in a blender or food processor.
    • Blend until creamy.
    • Serve on the side.
