  • 8 oz Tasso, finely diced • 1 cup Bread crumbs • 1 tbl Essence • 1/2 cup Parmigiano-Reggiano cheese grated • 12 med Calms, on the half shell  
     
  SAFFRON SABAYON  
     
  • 4 x Egg yolks • 1 x Lemon, juice of • 1 pch Baby Brand Saffron Salt and pepper • 2 tbl Chives, chopped • 2 tbl Brunoise red peppers • 2 tbl Brunoise yellow peppers
